Afternoon: stay on one side
Bandra West or Colaba both work as a whole afternoon — walkable once you are there, full of quiet cafes and easy places to sit, and neither asks you to cross the city at a bad hour. Bandra to Colaba can take an hour at the wrong time, which is the single most useful thing to know about planning here.
Lower Parel is the third option if you are already south for the evening, and Juhu if you would rather the afternoon ended at the sea.
Getting around without losing the day
Cabs and app rides are everywhere and cheap by international standards, so the cost of moving is rarely the issue — the clock is. The harbour and the western suburbs are effectively separate cities at peak hours.
The local trains are fast and genuinely useful off-peak, and genuinely not somewhere to take a first meeting at rush hour. Deciding which side of the city the day belongs to, once, saves more time than any other choice you will make.

Dinner, and the evening after it
Dinner rarely starts before 8.30, which makes the hour before it the pleasant part of the plan rather than an awkward gap. The seafront stays busy well past midnight, so a walk after dinner is completely normal here and needs no arranging.
None of it wants to be rushed. An evening in Mumbai is long by default, and the plan works better when it assumes that.
When to come, and when to ask
November to February is the pleasant window and the busiest for bookings — it is wedding season, and it carries the run of gallery openings and literary evenings that come with it. A few days' notice is usually enough outside that stretch; through the winter, and especially around wedding dates, a week makes a real difference to who is available.
The monsoon from June to September changes where rather than whether: a hotel lounge, a gallery, a long lunch. It suits unhurried conversation more than it sounds like it would.
