How the evening runs
An evening in Seoul comes in rounds. The first is dinner, often from 6.30 and finished quickly; the second moves somewhere else entirely for beer, tteokbokki or a dessert cafe; a third round is common and nobody treats leaving after the first as rude. Cafes stay open past midnight and are the usual place for the long half of the conversation. Dress is neat and coordinated rather than showy, and shoes come off in some older restaurants.
Getting around
The subway covers almost everything worth reaching, is signposted in English and Korean, and takes the same T-money card as the buses. Last trains leave the outer stations around midnight, and the twenty minutes after that is when taxi apps become useless. The river splits the city in two: Gangnam and Hongdae are on opposite banks and half an hour apart, so an evening usually stays on one side. Hannam and Itaewon are built on a hill steep enough to matter in the wrong shoes.
When Seoul is busiest
Four sharp seasons, and two of them draw crowds. Early April is cherry blossom along the Han river and the Yeouido embankment; late October into November turns the palace grounds and Bukhansan gold. Between them sits jangma, the rainy stretch of late June and July, and an August that is genuinely humid. January is cold and dry rather than snowy. Seollal and Chuseok move the whole country to its home town for several days and much of the city closes.

Why does an evening in Seoul move venue so often?
Because a place tends to do one thing well and nothing else. A grill house is for grilling, so the drinking moves on, and the talking moves on again to a cafe. Walking ten minutes between rounds is part of the evening, not an interruption to it.
What happens after the last subway train?
Districts diverge. Hongdae, Gangnam and Itaewon simply keep going until the trains restart around 5.30am, and 24-hour cafes are easy to find. Quieter neighbourhoods empty out, so it is worth deciding before midnight whether the night is ending or not.
Which weeks change the character of the city?
Seollal in late January or February and Chuseok in autumn. Both are family holidays lasting several days, shops and restaurants shut, and central Seoul goes unusually quiet while the roads out of it do not.
